DININGS
& BARS: Although Madrid is inland, it is paradoxically
the paradise of fish and seafood, 'the best port in Spain'
as is usually said. In fact, Madrid is the world's second
most important fresh fish market after Tokyo. This is reflected
in its gastronomic offerings, rich in dishes based on Mediterranean
cuisine. Basque, Galician, Cantabrian or Andalusian restaurants
abound in the city and proudly display to diners menus with
an endless list of fish and seafood cooked in such different
ways.
Bream,
hake, turbot, bass, grouper, anglerfish, cod and other succulent
fish are common in Madrid (the gourmet Julio Camba said: 'Of
all the fish in the sea, the bream is the most traditional
in Madrid.'). Stewed or grilled, they compete in exquisiteness
with the Andalusian fried fish, pescaditos, where the key
to success lies in combining fresh, raw materials with a good
olive oil used for frying them.
A
special mention should be given to the seafood restaurants,
sacred temples in which crayfish, lobsters, prawns, Norway
lobsters, oysters, spider crabs, plus countless other mouth-watering
