Shipley's
Restaurant. A sense of Sydney's rich past is never far away at
the Holiday Inn Darling Harbour, especially when you're dining
in Shipley's. Shipley's is named after John Shipley, who owned
the coffee and spice mill located on the site last century.
JB's Bar & Grill was originally a woolstore built more than
a century ago by a local merchant, John Bridge. JB's has local
and imported beers on tap and features wines from the famous Hunter
Valley region, just north of Sydney. JB's
Bar & Grill is also famous for its sizzling Stonegrill steaks
and cooling ales.
